Apple – Jicima – Coleslaw

This tangy sweet coleslaw is quick and easy to make to accompany any sandwich.

Apple Jicima  Coleslaw

1# – Jicima (peeled, shredded)
2ea. – Granny smith apples (cored,shredded)
4oz. – Coleslaw dressing
salt and pepper to taste

Makes 5 portions

Preparation:
You can shred the apples and jicima with a box grater using the large holes, or you can use a food processor using the grating blade. You want to shred the apple last just before adding the cole slaw dressing so the apple doesn’t turn brown.  Mix all ingredients together.
