Blue cheese – Flan – Fillet Mignon

This is a recipe I used back in the 80’s, to put on top of a Fillet Mignon. Nice creamy texture with lots of flavor.
You can also put one in the center of a salad.

Blue cheese flanblue cheese
1/4cup – Butter
1/2lb. – Blue cheese crumbled
2lbs. – Cream cheese softened
6ea. – Eggs
2ea. – Egg yolks
2 3/4cups – sour cream
1/2 tbls. – Salt
1/2 tbls. – Black pepper
1/2 tbls. – Rosemary (fresh chopped)
1/2 tbls. – Sage (fresh chopped)
1/2 tbls. Oregano (fresh chopped)
1/2 tbls. – Dill (fresh chopped)

Procedure:
Mix all ingredients together, cover bottom of half size sheet pan with parchment paper, pour mix into pan, level out mix and bake in a preheated 250 degree oven  for 35-45 min. until set, once it has cooled enough to handle, cut out rounds with cookie cutter and place on top of Filet Mignon, sauce and serve.
