This dressing recipe is a real good match with a Greek salad or you can use it on any salad you like.

Greek Salad – Chicken

Here is a version of a Greek salad that I really enjoy! With this salad you can increase or decrease any amount of ingredients to customize the salad to your likes or dislikes.
Greek Salad With Grilled Chicken

Made a quick meat rub the other night when we where having a piece of flatiron steak cooked on the grill. It”s quick, easy and really adds a bang to the flavor of the steak that I did not have all day to marinade. Could also be used on a steak for a salad.

This is a refreshing coleslaw with a little sweetness from the carrots.
Jicama Carrot Coleslaw
2# – Jicama (cut julianne)
2# – Carrots (cut julianne)
2bu. – Cilantro (chopped)
2-4oz. – Coleslaw dressing
Makes 8 portions

Well Marbled – Grilled Flat Iron Steak – Salad

The Flat Iron Steak is a cut of steak from the shoulder of a steer,well marbled, flavorful and tender. This cut of beef can be a little costly because you only get four pieces per steer, that’s why you don’t usually see it displayed. But it’s well worth the price.

This is a different style of a Waldorf salad. Using red grapes, walnuts, Gorgonzola cheese.
Chicken Waldorf Salad
4oz. – Chicken breast (grilled and cubed)
3-4oz. – Mixed greens
3oz. – Red grapes (cut in half)

Gorgonzola Spinach Salmon Salad

Gorgonzola Spinach Salmon Salad
4oz. – Grilled miso rubbed Salmon fillet
3oz. – Spinach (cleaned)
2oz. – Red onion (julianne)
2oz. – Mushrooms (sliced)
1oz. – Gorgonzola cheese crumbled
20z. – Balsamic vinaigrette
