Memories – of Mom’s – Italian meatballs
I made Italian style meatballs the other night. When I was browning them off in olive oil, and the house filled with this great aroma. All these memories came rushing back to me when my mother use to make meatballs. Browning them off in her cast iron skillet. We (my brothers and sisters) would sneak into the kitchen and snake a meatball without my mother seeing us. They where so good, hot and full of flavor.
I never did get her recipe before she passed, but I think this recipe is pretty good.
Italian style meatballs
1lb. – Ground beef
1ea. – Whole egg (lightly beaten)
3/4cup – Seasoned bread crumbs
1/3cup – Milk
1/4cup – Parmesan cheese
1/4cup – Romano cheese
2tsp. – Granulated garlic
1tbls. – Onion powder
2tsp. – Parsley flakes
11/2tbls. – Oregano (dried)
1tbls. – Basil (dried)
1tsp. – Red crushed pepper
Salt and Black pepper to taste
olive oil
Preparation:
Combine all ingredients, mix well, roll meatballs so they are about 1 1/2″ wide. Heat oil in pan on stove top, once the oil is hot place meatballs into pan without crouding and brown them all around on med high heat. Drain on paper towel until all are done. If useing them at that time you can finish cooking them in your favorite maranara sauce. Or you can finish cooking them in a 375 oven for about 8- 10 min., let them cool, bag and freeze for future use.
