Roasted Peanut Sauce – Lemon Grass

This is a tasty sauce for chicken or beef sate, a grilled chicken breast, stir fry’s, or over shrimp and rice.

Roasted Peanut Sauce with Lemon GrassLemongrass

1cup – Roasted unsalted Peanuts
3tbls. – Vegetable oil
1ea. – Yellow Onion (small)
1tbls. – Garlic (chopped)
1/2cup – Red Crushed Pepper
1″pc – Ginger (fresh,peeled & chopped)
2″pc – Lemon Grass (chopped)
1/2tsp. – Ground Cumin
3tbls. – Cilantro (chopped)
1tbls. – Sesame oil
1/2cup – Coconut milk
2tbls. – Soy Sauce
2tbls. – Lime Juice (fresh)
Salt and ground Black Pepper to taste.

Procedure:
Place the nuts into a food processor or blender and 2tbls. Vegetable oil and process into a smooth paste, transfer to a bowl.
Place the next seven ingrediants into a food processor or blender, process into a fairly smooth paste, transfer to bowl.
Heat the remaining vegetable and sesame oil into a sauce pot and add onion mixture and saute for 10 to 15 min. stirring occasionally.
Stir in the peanut paste, coconut milk, soy sauce, and lime juice stirring until heated through, add salt and pepper to taste.
Makes about 10 servings.
